Distillery Note:
A complex expression created from fewer than 20 casks laid down in 1989 and earlier years, our 30 Year Old Spring 2019 Release is the rarefied result of a trio of different cask types.
Master Whisky Maker, Gordon Motion, took the unusual step of bringing together three different cask types for this release. For sweet notes of vanilla and honey with hints of sharp citrus, he selected first-fill ex-bourbon casks; to add rich layers of stewed fruit and warm spice flavours, first-fill sherry seasoned casks were selected; and finally, a small but vital number of refill casks were called in to round off the harmony of flavours.

Blackened bananas, stewed greengage, cracked black pepper. An intriguing nose! Fresh citrus on the palate, with honey and delicate peat smoke, rolling around to more citrus and a touch of mint on the finish.

Salty smoked kippers on buttery brown toast with freshly cracked black pepper and freshly squeezed orange juice with ground black coffee. Breakfast of champions! Notes of pine and soap. A hint of sweetness balances the smoke on the palate, and there’s plenty of pepper spice on the finish!

Bacon straight away, but that then fades and gives way to warm bonfire, sweet tobacco and just a note of rubber. With more time in the glass treacle, cereal and pleasant soapiness. The palate is lead by sweet fruit and honey, then peppery heat, and an oily, woodsmoke finish. A complex and evolving whisky.
