Distillery Note:
As the most northerly distillery on Islay, we’re renowned for our unpeated, classically sherried single malts. And this limited release is quintessentially Bunnahabhain in style. Fully matured in rare Canasta sherry casks, its resting place was once home to skillfully blended sherries made from Palomino and Pedro Ximenez grapes. Canasta Casks are very classical in style, with the balance of Oloroso sherry imparting flavours of spice, and the PX adding layers of complexity, richness and sweetness.
Nose: Classic sherried nose; sweet and caramelised fruits, honey roasted nuts, waves of cinnamon and clove with a hint of rancio.
Palate: Maple syrup leads with creamy vanilla, dried figs, poached pears and a sprinkle of cocoa. A gentle twist of orange appears in the background.
Finish: Long and sweet with notes of brown sugar, red apples and vanilla custard.

Salted fudge, rich leather, sweet dried apricot. Then on the palate there is orange blossom honey, sherry notes, delicate spice and lovely oily mouthfeel. Orange oil rolls back around to give a long finish that just keeps on going.

Rich creamed coffee, burnt caramel, dark chocolate orange and hints of stewed prunes: a rich and indulgent nose. The palate has delicate, light caramel sweetness with overtones of orange oil and delightful peppery nutmeg. Impressive.

Bacon straight away, but that then fades and gives way to warm bonfire, sweet tobacco and just a note of rubber. With more time in the glass treacle, cereal and pleasant soapiness. The palate is lead by sweet fruit and honey, then peppery heat, and an oily, woodsmoke finish. A complex and evolving whisky.

Matured in PX, charred virgin oak and ex-bourbon. Sweet crème brulee and Hobnobs on the nose, balanced by herbaceous flavours of wild mint and delicate aniseed.
