Bonfire-charred sweet cure smoky bacon with just a wee hint of a sticking plaster medicinal note. The palate is just a burst of sweet & spicy fruit – apricots & ginger in syrup – with a bright, smoky, almost Mezcal like finish.
Everything we fell in love with when we tried the cask back in the summer, but learned a few new tricks in the months between then and being bottled. Very proud to call it our 25th Birthday Bottling.
