Notes
A buttery pastry case, lightly dusted with nutmeg ready for a custard filling, or perhaps almond oil and oak shavings. Sour apples, spiced pears, ripe melon and orange peel, before an intense brown sugar sweetness builds. Apples and pastry persist on the palate, now caramelised and bitter-sweet.

Dark chocolate and coffee mingle with oily smoked fish, cracked black pepper and lemon balm. On the palate more dark chocolate, smoky bacon, cloves, burnt toffee, an oily, briny texture and a tarry finish. Beach, bonfire, friends.

Bacon straight away, but that then fades and gives way to warm bonfire, sweet tobacco and just a note of rubber. With more time in the glass treacle, cereal and pleasant soapiness. The palate is lead by sweet fruit and honey, then peppery heat, and an oily, woodsmoke finish. A complex and evolving whisky.
