Plenty of ripe pears, nectarines and peaches alongside a fair whack of cinnamon and nutmeg. The palate is all crystalised fruits – ginger, orange peel and cherry, with the odd one perhaps dipped in chocolate.

Lemon zest, honeysuckle and egg custard along with toffee, green-leaf herbs and soft spiciness on the nose. The palate brings boiled sweets, bitter lemon and salt, walking a knife-edge between all three. Sour orchard, candied fruits, salted caramel and sea-spray, along with barrel-char smokiness, black-peper spiceness and fresh, clean notes.

A very elegant nose – lots going on but beautifully balanced. Baked apple, honey, lemon zest alongside slightly more poised notes of malt, almonds and cedar wood.
